BBQ Ribs
I can’t believe I went my whole life without eating ribs! I just tried them for the first time about 6 months ago and I love them! If cooked right, they are so tender and delicious!
Unfortunately, I can’t eat grilled food. I get terrible stomach pains every time and still haven’t figured out why. So, I make my ribs in the oven. If you are okay with grilled food, you can certainly grill them if you prefer. Just adjust the cooking time. Ribs are best when they are between 190-200°F. This is the temperature at which the collagen and fats melt down enough to make the ribs tender. They will be juicy at this temperature too. If you cook them less they may be tough and if you cook them more they may be dry. So, keep a close eye on them to make sure they end up just right.
My nightshade-free BBQ sauce is perfect for ribs! You can find that recipe here. I make the sauce ahead of time so that there isn’t much hands on cooking time when I make my ribs.
These ribs are great served with Fried Cabbage (recipe coming soon)!
