Instant Pot Pineapple Carnitas
Melt in your mouth pulled pork! Great for tacos, nachos, salad, or just plain!

Ingredients
Pork

Instructions
Pineapple Sauce
Add all sauce ingredients to a medium bowl and mix well.
Pork
Cut pork into 2-inch chunks and season with salt to taste.
Push the SAUTÉ button on the instant pot.
Add 1 Tbsp of olive oil and half of the pork.
Sauté pork, turning until browned on all sides. (Do not use lid for sautéing)
Remove from instant pot and repeat with other half of the pork.
Once all pork is browned, return all pork to instant pot and push CANCEL to stop sautéing
Pour pineapple sauce over pork and mix well.
Close instant pot lid and set the vent to SEALING.
Push the MEAT button and then push PRESSURE until it is set on high pressure.
Set time for 30 minutes.
Once pork is finished cooking, carefully turn the vent to VENTING to release the pressure.
Preheat broiler.
Remove pork from instant pot and shred on a baking sheet with two forks.
Ladle a couple scoops of sauce from the instant pot over the shredded pork.
Broil for about 5 minutes, then stir pork. If it looks dry, you can add more of the sauce from the instant pot to it.
Broil for another 5 minutes, then stir again. Once again, you can add more sauce if it looks dry.
Broil for 5 more minutes. The pork should be crispy on the edges.
